“Corned Deer Breakfast Skillet”

Serves 2 people

Description:

I am a breakfast guy. Pancakes, sausage, eggs, coffee, I love it all. I have a ritual in my house where the weekend doesn’t start until I serve breakfast to the family. When my oldest child and I leave early on a hunting or fishing day trip, I always make extra breakfast and leave it in the oven for my wife and the younger kids. That said I don’t believe there is one perfect breakfast, the choices are all amazing. This “Corned Deer Breakfast Skillet” is one of my favorites and you should make one for yourself and your loved ones tomorrow morning.

Ingredients:

4 large eggs

Shredded Cheddar Cheese

Corned Mule Deer Roast

Yellow Potatoes

Crystals Hot Sauce

Green Bell Peppers

Yellow Onion

Olive Oil

Salt and Pepper

Minced Garlic

Butter

Cooking Instructions:

Corned Deer:

Select a roast you want to make into corned deer (4-5 lbs from front shoulder or neck works best)

Brine Ingredients:

Make a Corning Brine

  • Add salt, sugar, pink salt, and picking spice to a large pot of water. Boil the brine to dissolve the salt and sugar, then chill in the refrigerator.

Make Corned Deer

  • Submerge Meat in Brine for 4 days in fridge
  • Rinse meat in sink
  • Place meat in crockpot on low until meat shreds easily
  • Corned meat can be frozen in 1 lb bags for easy access later and keeps in the fridge for several weeks.

Eggs:

While this skillet can be served with any style egg depending on the preference of the eater, it’s hard to beat the taste of a runny egg yolk cascading down mountains of mule deer meat and fried potatoes.

Skillet:

Add Butter and Olive oil to Cast Iron Skillet

Dice Potato’s into 1/4 inch cubes

Soak Potatoes in Cold water for 5 min

Dice Onions and add to skillet over medium heat until they turn translucent

Add a table spoon or two of garlic (measure with your heart)

Add Diced Potatoes to Skillet

Chop one green bell pepper into small 1/4 in cubes

Add Bell pepper to Skillet

Add 1/4 lb shredded corned deer meat to skillet (meat is already cooked your just warming it up and crisping the edges)

In a side pan cook eggs according to eaters preference

Stir regularly until Potatoes are crispy on the edges and soft in the middle

Season with salt and pepper to taste

Sprinkle shredded cheese on top

Assemble Corned Deer Breakfast Skillet:

Scoop Generous Helping of potato corned deer mix onto plate

Top with 2 eggs over easy

Serve with Crystals Hot Sauce and a fork

Cocktail Pairing:

This is a Breakfast dish, so a cocktail probably isn’t the most relevant. That said you can never go wrong with an Irish Coffee. Whiskey, Baileys, Coffee, everything a hungry hunter needs with their breakfast skillet.
